Bacon Bourbon Barbecue Sauce

  • apple cider vinegar
    1-1/2 cups
  • bacon (finely diced)
    2 strips
  • black pepper (freshly ground)
    2 tbsp
  • bourbon
    1/2 cup
  • granulated sugar
    1/4 cup
  • ketchup
    2-1/2 cups
  • light brown sugar (packed)
    1/4 cup
  • red pepper flakes
    2 tbsp
  • salt

  • heavy non-reactive saucepan

    Place bacon in a heavy non-reactive saucepan . Cook over medium heat, stirring with a wooden spoon , until the bacon is browned, about ⏱️ 3 minutes .

    Stir in apple cider vinegar and bring to a boil.

    Stir in ketchup , light brown sugar , granulated sugar , red pepper flakes , black pepper , and bourbon , then slowly return to a boil.

    Reduce the heat and simmer the sauce, uncovered, until thick and richly flavored, ⏱️ 15-20 minutes .

    Stir in salt — you'll need quite a bit to offset the acidity of the vinegar.
