Place @bacon{2%strips}(finely diced) in a #heavy non-reactive saucepan{}. Cook over medium heat, stirring with a #wooden spoon{}, until the bacon is browned, about ~{3%minutes}.

Stir in @apple cider vinegar{1-1/2%cups} and bring to a boil.

Stir in @ketchup{2-1/2%cups}, @light brown sugar{1/4%cup}(packed), @granulated sugar{1/4%cup}, @red pepper flakes{2%tbsp}, @black pepper{2%tbsp}(freshly ground), and @bourbon{1/2%cup}, then slowly return to a boil.

Reduce the heat and simmer the sauce, uncovered, until thick and richly flavored, ~{15-20%minutes}.

Stir in @salt{} — you'll need quite a bit to offset the acidity of the vinegar.

Use right away or transfer to clean jars, cover, cool to room temperature, and refrigerate. The sauce keeps for several weeks.
