1Season chicken breasts with salt and pepper , then cut the chicken into strips.chicken breasts: 6, salt: 1 tsp, pepper: 1 tsp

2Melt butter in a large pot and cook the chicken about ⏱️ 5 minutes per side until golden. Remove from the pot and set aside. To the same pot, add onion and cook until tender, about ⏱️ 5 minutes . Add and melt the remaining butter .butter: 4 tbsp, onion: 1.5 cups (chopped), butter: 4 tbsp

3Add flour and cook for ⏱️ 1 minute . Temperature here is critical — if it is too hot the flour will burn and ruin the whole dish.flour: 1/2 cup

4Whisk in the chicken stock and bring to a boil, then add carrots , celery , thyme , and additional salt and pepper to taste.chicken stock: 2.5 cups, carrots: 3 (diced), celery: 2 ribs (chopped), thyme: 1/2 tsp

5Return the chicken to the pot. Reduce to a simmer, cover with a lid, and cook on low for ⏱️ 25 minutes .

6Add heavy cream and the dumplings. Put a clear pie plate over the pot and cook for another ⏱️ 15 minutes , then check that dumplings are cooked through using a knife — the dough should come out clean.heavy cream: 1/2 cup

This is a double batch of dumplings.

1In a 2-cup measure, break both eggs and fill the rest of the cup with milk . Beat well and stir into the dry ingredients: flour , baking powder , and salt .
