Banana Curry Chicken

    Preheat oven to 450 degrees.

    In a mixing bowl , mash bananas with a fork, then add curry powder , ground coriander , ground mustard , butter , lime zest (zest of 1 lime), lime juice , salt , black pepper , and water . Stir to combine into a curry sauce.

    Make a few deep cuts in each chicken breasts and place them in a roasting pan . Pour the curry sauce over the chicken, making sure it gets into the cuts.

    Roast in the bottom third of the oven for ⏱️ 20 minutes , until the chicken is cooked through.

    Remove the pan from the oven and transfer the chicken to a plate. Set the pan over medium heat and whisk in the remaining water until the sauce is heated through.
