Banana Curry Chicken

1Preheat oven to 450 degrees.

2In a mixing bowl , mash bananas with a fork, then add curry powder , ground coriander , ground mustard , butter , lime zest (zest of 1 lime), lime juice , salt , black pepper , and water . Stir to combine into a curry sauce.bananas: 2-3, curry powder: 2 tbsp, ground coriander: 2 tsp, ground mustard: 1 tsp, butter: 3 tbsp (melted), lime zest, lime juice: 4 tsp, salt: 1-1/4 tsp, black pepper: 1/2 tsp, water: 1/4 cup

3Make a few deep cuts in each chicken breasts and place them in a roasting pan . Pour the curry sauce over the chicken, making sure it gets into the cuts.chicken breasts: 4

4Roast in the bottom third of the oven for ⏱️ 20 minutes , until the chicken is cooked through.

5Remove the pan from the oven and transfer the chicken to a plate. Set the pan over medium heat and whisk in the remaining water until the sauce is heated through.water: 1/2 cup
